So I decided to try out the homemade pizza dough with something different – King Arthur brand White Whole Wheat flour (unbleached, of course!).  The flavor was distinctly different, yet extremely pleasing, and I thought it gave the crust a bit more chewyness…which was a good thing!  The new pizza peel worked wonderfully as well!
